Hey everyone! I hope you had a fantastic week! This week, I’m back with another delicious gluten-free meal. I’ve been craving some Asian cuisine, but as anyone who’s gluten-free knows, finding safe options can be a real challenge. So, I decided to make my own gluten-free chicken fried rice! Let me tell you how I did it.
I started by washing and cooking basmati rice in my rice cooker. Once it was done, I let it cool and stored it in the fridge overnight. The next day, I seasoned and cooked a package of chicken. Once the chicken was ready, I heated some oil in my wok and added the day-old rice, letting it crisp up a bit.
Instead of using soy sauce, which isn’t gluten-free, I swapped it for coconut aminos. This is a great alternative to soy sauce that adds a similar savory flavor. Then, I mixed in frozen veggies, let them cook through, and scrambled a few eggs right in the wok. Finally, I added my cooked chicken back in, gave everything a good stir, and just like that, I had a delicious homemade gluten-free chicken fried rice!

ReplyDeleteDay to day I push my limits with gluten filled food and that usually leaves me pretty miserable. However, I LOVE chicken fried rice, so I think it would be really fun and interesting to try this dish prepared this way.
