Quick & Easy Gluten-Free Tortellini with Red Sauce

Hi everyone! I hope you’ve had another wonderful week. I’m back with a super quick and cozy gluten-free meal idea that’s perfect for those busy nights when you just don’t feel like spending hours in the kitchen.

This week’s recipe? Gluten-Free Tortellini with Red Sauce. Yep, it’s as simple as it sounds and it tastes amazing.

Now, I’ll be honest the hardest part of this recipe isn’t the cooking…it’s finding gluten-free tortellini. After some searching, I finally got my hands on a pack from Aldi (shoutout to their LiveGfree brand!). If you see it, stock up!

Ingredients:

  • 1 pack gluten-free tortellini (I used LiveGfree from Aldi)

  • Your favorite red pasta sauce (I use Aldi’s marinara sauce)

Directions:

  1. Bring a pot of water to a boil.

  2. Add the tortellini and cook for 2–3 minutes. Be careful not to overcook, gluten-free pasta can turn mushy fast!

  3. Drain the pasta and set aside.

  4. In the same pot, heat up your red sauce until warm.

  5. Gently fold in the cooked tortellini.

  6. Serve and enjoy!

Optional Add-Ins:

Want to level this up? Here are a few ideas:

  • Fresh basil or parsley

  • A sprinkle of parmesan or dairy-free cheese

  • Sautéed spinach or mushrooms

  • A drizzle of olive oil and red pepper flakes for a little kick
