Sweet & Spicy Salmon Bites Bowl

Hi everyone! I hope you all had another great week. This week I am sharing a flavor-packed, gluten-free dish with bold salmon bites, a refreshing cucumber avocado salad, and creamy spicy sauce, perfect for lunch or dinner.

Ingredients

Salmon Bites

1 lb salmon, skin removed and cut into bite-sized pieces

2 tbsp olive oil

2 tbsp honey

3 tbsp sriracha

¼ cup coconut aminos


Cucumber Avocado Salad

2 cucumbers, finely chopped

1 avocado, finely diced

1 lime, juiced

1 tbsp honey

Spicy Sauce

1 cup plain Greek yogurt

1 lime, juiced

¼ cup sriracha

1 tsp smoked paprika

2 tsp cumin

1 tbsp honey

Directions

1. Preheat & Cook Rice:

Preheat your oven to 400°F. While it’s heating, wash and cook your rice (in a rice cooker or on the stove).

2. Prepare Salmon:

In a bowl, toss salmon bites with olive oil, honey, sriracha, and coconut aminos until fully coated.

Transfer to a parchment-lined baking sheet.

3. Bake:

Bake salmon for 10–12 minutes. Then, broil for 2–4 minutes to crisp the tops.

4. Make Spicy Sauce:

Combine all sauce ingredients in a bowl. Mix until smooth. Taste and adjust seasoning as desired.

5. Make Cucumber Avocado Salad:

Add all salad ingredients to a bowl and toss gently to combine.

6. Assemble Your Bowls:
