Tomato Soup

Hi everyone. As promised from last week I will be sharing with you how to make homemade tomato soup! 

First you are going to want to gather about 3 pounds of tomato, I used cherry tomatoes, and wash them and put them on a sheet pan. On the sheet pan put a head of garlic as well as coat everything in olive oil and seasonings. I used rosemary, oregano, smoked paprika, salt, and pepper. Then put them in a preheated oven that is set to 450 degrees. Bake for about 30 to 40 minutes. 

While that is cooking add olive oil to a large pot and over medium heat sauté an onion. When the tomatoes are done add everything on the sheet pan to the large pot with the sautéed onions. Add in fresh basil and a cup of broth. I used chicken bone broth but you can use any you like. 

Next you are going to want to use either a handheld immersion blender or a traditional blender and puree the soup until it is your desired texture. 

Season the soup with extra salt, pepper, and smoked paprika as needed.  

Serve warm and garnish with any extra toppings you like and enjoy it with your grilled cheese!
